Trip to England (and cupcakes of course!)

I have just returned from an overseas trip to England. In between visiting family and sightseeing, I managed to fit in some quality cupcake time! First was a special one, I treated myself to a cupcake from Rick Stein's Patisserie in his home town of Padstow. A lovely lemony cake topped with cream cheese and raspberry icing! Just divine!

Next was probably the most satisfying cupcake experience of my life! A white chocolate and raspberry cupcake from Marks & Spencers! It was soooo good! Yummy soft vanilla cake scattered with tiny white choc chips, an oozing blob of raspberry jam in the middle, all topped with a divine raspberry buttercream icing. It was so balanced, so perfect! I am looking forward to making some (well.... to the best of my ability! very soon - stay tuned!)

Butterfly Cakes

This was an order I did recently for a friends niece's 2nd birthday. I cut out the butterfly's with a cookie cutter about a week early and left them to dry in between folded cardboard so that their wings folded upward. Finished off with a sprinkling of edible glitter, perfect for little girls!

Sprinkles and Freckles for Karen!

These cakes were inspired by Freckles! I baked chocolate cakes with chocolate icing and then covered them in freckles and matching sprinkles! Yum! Happy Birthday Karen x

Clinker Cakes for Tahlia!

Next up is Tahlia's Birthday! She is having a 90's themed birthday so I decided to get out some fluro colours and make chocolate clinker cakes. Chocolate cake and icing with clinkers and matching sprinkles!

5 times the fun starting with Brihony!

Five of my gorgeous friends have birthdays in February/March so I have decided to bake them a different batch of cupcakes each to help celebrate their special occasions. Below are Brihony's cakes. She wanted them to incorporate the gay pride colours and also hearts for Valentines Day.... they turned out a little more Care Bears rather than gay pride but nether the less, were extremely popular and delicious!

Baileys Cupcakes - Adults Only!!

These are a new fave of mine for that special occasion....Baileys Cupcakes!
Start by baking your fave chocolate cake recipie, once cooled, scoop out the middle and add a white chocolate and baileys mixture, ice back over the top with chocolate icing and then mix cut out cake scraps with left over chocolate and baileys mixture. Roll into little balls, coat in cocoa and then place on top of icing! I like to decorate with chocolate sprinkles around the edges and piped chocolate on top! Yum!!!




Cakes for Phoenix's 3rd Birthday

It was my nephew's 3rd birthday on the weekend and we were celebrating with a picnic at the local farm so I decided to make pig cupcakes! Marshmallows for the noses with piped chocolate for the nostrils, chocolate sultanas for the eyes with piped milk and white chocolate detail, mini marshmallows chopped in half for the ears and piped milk chocolate for the mouths! Cute! Big hit with the 3 year olds (and adults!)


Cakes for Pla's Birthday

These are some cakes I made for my sister in-laws birthday. Lots of pinks and girly colours! I displayed them on my new cake stand.... 3 dozen cakes in total... lots of fun!
